Hand picked from low yielding vines in the south of the region. Pressed direct to French oak barriques of which 40% were new. Wild full solids ferment and a small amount of MLF to retain fruit purity.
Matured on lees in barrel for 9 months.
Stonefruit, honeydew blossom and hints of citrus complimented by Southern Ocean maritime acidity.
Pairs well with: Scallops, chicken dishes and pork
